Climat : Oceanic climate. North-westerly exposure

Grape variety : 50 % Chenin - 50 % Chardonnay   

Average age of vines : 25 ans

Yield : 74 hl/ha


VINIFICATION

Harvest : By hand (in bunches)

Vinification : Méthode traditionnelle

Ageing : In stainless steel tanks for 1 year and on laths for 18 months


TASTING NOTES (by Didier Coutenceau - Oenologist)

Very attractive robe of pale straw and lime.

Good, persistent effervescence. Fine columns of lively, delicate bubbles

Attractive subtle, dainty bouquet of white flowers – acacia, may blossom and lime.

Fresh, lively and continuous aromatic start, followed by strong flavours of ripe fruits, pear and plum. Full, silky body with a dry, slightly bitter sensation at the finish. Good effervescence throughout.

Very good, well-balanced structure.


PREPARING AND SERVING   

The Crémant de Loire of Domaine des Rochelles is a fine accompaniment to:

  • As an aperitif
  • Shellfish, scallops, white sauces
  • White meats (veal, pork, poultry) or fish blanquette
  • A superb finish to the meal with pâtisseries, desserts and sorbets
  • With a hint of Cointreau in chocolate pâtisseries
